Retro Pine Lime Jelly Cake

Ingredients
  

For the jelly layers
  • 6 leaves platinum strength gelatine leaves Soaked in cold water
  • 85 g packet pineapple-flavoured jelly crystals Dissolved in boiling water
  • 1.5 cups boiling water For dissolving jelly crystals
  • 2 tablespoons lime juice Freshly squeezed for best flavor
  • 1 kg vanilla coconut yoghurt For layering and texture

Method
 

Preparation
  1. Soak 1 gelatine leaf in cold water for 5 minutes.
  2. Dissolve the jelly crystals in boiling water.
  3. Stir in the soaked gelatine leaf and lime juice until fully blended.
  4. Add 1 cup of yogurt to the mixture, combine well, and strain it into a loaf pan.
  5. Chill for about 3 hours until set.
Layer Creation
  1. Soak the remaining gelatine leaves.
  2. Heat 1/2 cup of the yogurt until warm.
  3. Stir in the gelatine until fully dissolved and then incorporate the rest of the yogurt.
  4. Pour this mixture over the set jelly to create a layer.
  5. Chill overnight to set.
Serving
  1. Dip the loaf pan in hot water for about 30 seconds to ease the cake out.
  2. Flip onto a plate and serve chilled.
  3. Optionally, garnish with fresh fruit or lime syrup.

Notes

For smoother texture, dissolve the gelatine completely before mixing. Experiment with other fruit flavors for a personal twist. Do not rush the chilling process to maintain layers.
