Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 3/4 cup unsalted butter, soft
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup milk or orange juice
Fruits
  • 1 1/2 cups mixed dried fruits (raisins, cherries, mixed peel, apricot)
  • 1/2 cup tutti frutti (optional but recommended) Adds color and sweetness

Method
 

Preparation
  1. Preheat the oven to 170 degrees Celsius (340 degrees Fahrenheit).
  2. Grease and align your loaf pan with parchment paper.
Mixing the Batter
  1. In a bowl, sift together the flour, baking powder, and salt.
  2. Cream the butter and sugar until pale and fluffy.
  3. Add the eggs one at a time and mix well, then stir in the vanilla extract.
  4. Gradually add the flour mixture alternating with the milk or orange juice, blending gently until the batter comes together.
Adding Fruits
  1. Lightly coat the mixed dried fruits and tutti frutti in a tablespoon of flour.
  2. Fold the fruits into the batter.
Baking
  1. Pour the mixture into the prepared loaf pan and smooth the top.
  2. Bake for 50 to 60 minutes until golden brown, and a skewer inserted comes out clean.
Cooling
  1. Allow the cake to cool in the pan for 10 minutes before transferring to a rack to cool completely.

Notes

Store in an airtight container at room temperature. The flavors improve over time. Consider soaking dried fruits in your favorite spirit for extra flavor.
