Preparation
- Preheat your oven to 325 degrees F.
- Blend together eggs, ricotta cheese, salt, and pepper until smooth.
- Place silicone molds inside a baking pan and fill them with the egg mixture, leaving a gap at the top.
- Create a hot water bath by pouring hot water into the baking pan until it reaches halfway up the molds.
Baking
- Bake on the bottom rack for 25-35 minutes until set.
- Allow to cool, then remove from molds and store in an airtight container in the fridge.
Notes
Serve hot with a smear of harissa or basil pesto, or cold as a protein-rich snack. Store in an airtight container; they can be frozen for up to 1 month.
