Method
 

Preparation of Cheesecake Filling
  1. In a bowl, blend cream cheese, powdered sugar, and vanilla until smooth.
  2. Form into small orbs and freeze for 20-30 minutes.
Making the Cookie Dough
  1. Cream together softened butter and sugars until fluffy.
  2. Add in the egg and vanilla, mixing until combined.
  3. Sift in flour, baking soda, and salt, mixing until a tender dough forms.
Assembling the Cookies
  1. Take a spoonful of cookie dough, flatten it slightly, and place a cheesecake orb in the center.
  2. Seal with more dough, ensuring the cheesecake is enclosed.
Baking
