Preparation
- Preheat your oven to 350 degrees F (175 degrees C) and line a baking sheet with foil or parchment.
- Lay the saltine crackers in a single layer on the baking sheet.
- Melt the chocolate chips and coconut oil in the microwave until smooth, then spread over the crackers.
- Chill in the fridge to partially set.
Cooking
- In a saucepan, melt the butter and combine it with brown sugar, corn syrup, and salt.
- Bring to a boil and cook for 3 minutes without stirring.
- Remove from heat and stir in the vanilla.
- Pour the caramel over the chocolate layer and sprinkle with mini chocolate chips and flaky sea salt.
Setting
- Chill the bars until set, then slice into squares and serve.
Notes
Store in an airtight container at room temperature for up to a week, or in the fridge for a chilled treat. Freeze for extended storage.
