Base ingredients
  • 35 to 40 pieces saltine crackers Arrange closely on the baking sheet.
Chocolate Layer
  • 1.5 cups semi-sweet chocolate chips Melt with coconut oil for a smoother consistency.
  • 1 teaspoon coconut oil Optional, for melting with chocolate.
Caramel Layer
  • 1 cup unsalted butter Melt in saucepan.
  • 1 cup packed brown sugar Add to the melted butter.
  • 0.25 cup light corn syrup Can be substituted with honey or agave syrup.
  • 0.5 teaspoon salt To enhance the flavor.
  • 1 teaspoon vanilla extract Stir in after removing from heat.
Toppings
  • 0.5 cups mini chocolate chips Sprinkle on top of the caramel layer.
  • Flaky sea salt Sprinkle over the top for extra flavor.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C) and line a baking sheet with foil or parchment.
  2. Lay the saltine crackers in a single layer on the baking sheet.
  3. Melt the chocolate chips and coconut oil in the microwave until smooth, then spread over the crackers.
  4. Chill in the fridge to partially set.
Cooking
  1. In a saucepan, melt the butter and combine it with brown sugar, corn syrup, and salt.
  2. Bring to a boil and cook for 3 minutes without stirring.
  3. Remove from heat and stir in the vanilla.
  4. Pour the caramel over the chocolate layer and sprinkle with mini chocolate chips and flaky sea salt.
Setting
  1. Chill the bars until set, then slice into squares and serve.

Notes

Store in an airtight container at room temperature for up to a week, or in the fridge for a chilled treat. Freeze for extended storage.
