Brownie Mixture
  • 8 ounces unsweetened baking chocolate
  • 1 cup butter
  • 5 eggs
  • 3 cups white sugar
  • 1 tablespoon vanilla extract
  • 1.5 cups all-purpose flour
  • 2 cups chopped walnuts
Frosting
  • 1.25 cups white sugar
  • 1 cup heavy cream
  • 5 ounces unsweetened baking chocolate
  • 0.5 cup unsalted butter, softened
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 375 degrees F (190 degrees C) and grease a 9x13-inch baking pan.
  2. In a microwave-safe bowl, melt together the baking chocolate and butter until smooth.
  3. In a large bowl, combine the eggs, sugar, and vanilla, beating until light and fluffy.
  4. Mix in the melted chocolate and butter, then fold in the flour and chopped walnuts.
  5. Spread the mixture evenly in the prepared pan and bake for about 35 minutes.
Frosting
  1. In a saucepan, combine the sugar and heavy cream, then simmer for 10 minutes total - 3 minutes initially and an additional 7 minutes.
  2. Stir in the baking chocolate and softened butter until melted and combined. Whisk in the vanilla.
  3. Cool the frosting in the refrigerator until it thickens, then frost the cooled brownies.
Serving
  1. Cut the brownies into 32 squares and serve on a plate or tray. They're excellent plain or with ice cream.

Notes

Playing with toppings such as a sprinkle of sea salt or adding peanut butter to the batter can enhance the brownies. Store covered at room temperature or refrigerate for up to a week. They freeze well in airtight containers.
