Ingredients
  

For the Shortbread Crust
  • 1 cup unsalted butter, softened
  • 1/2 cup sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
For the Filling
  • 1 cup mixed berries (fresh or frozen)
  • 2 pieces apples, peeled and chopped
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon (optional)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Gradually mix in the flour and salt until combined.
  4. Press this mixture into the bottom and up the sides of a pie dish to form a crust.
Make the Filling
  1. In a separate bowl, combine the berries, chopped apples, sugar, lemon juice, cornstarch, and cinnamon (if using). Mix well until the fruit is coated.
Assemble and Bake
  1. Pour the fruit filling into the prepared shortbread crust, spreading it evenly.
  2. Place the pie in the preheated oven and bake for 30-35 minutes or until the crust is golden brown and the filling is bubbly.
Cool and Serve
  1. Allow the pie to cool at room temperature before slicing.

Notes

Serve the pie warm or at room temperature, optionally topped with vanilla ice cream or whipped cream. Store leftovers in an airtight container in the refrigerator for up to three days.
