  1. Pre-heat your oven to 175°C. Line a 15 cm x 25 cm loaf tin with greaseproof paper.
  2. In a mixing bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs.
  3. Sift in the flour, ground cinnamon, and baking powder.
  4. Grate three apples into the batter and mix thoroughly.
  5. Pour the batter into the tin.
  6. Slice the remaining apples and arrange them on top, then sprinkle with cinnamon and brown sugar for that extra touch of sweetness.
  7. Bake for about 1 hour and 20 minutes or until a skewer comes out clean.

Notes

Serve warm with vanilla ice cream or whipped cream. For added crunch, consider adding chopped walnuts or pecans to the batter. This cake can also adapt into a loaf cake style; just adjust the baking time as needed. Store covered at room temperature for up to three days or refrigerate for about a week.
