  • 3 cups roasted sweet potatoes, mashed Use fresh sweet potatoes for the best flavor.
  • 1/2 cup maple syrup
  • 1/4 cup brown sugar
  • 1/2 cup raisins
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 cups mini marshmallows Can be swapped for coconut flakes for variation.
Topping Ingredients
  • 1 cup pecans, chopped Omit for a nut-free version.
  • 1/4 cup maple syrup For topping.
  • 1/4 cup flour For topping.
  • 1/4 cup brown sugar For topping.
  • 1/4 cup butter or vegan butter Use vegan butter for a vegan version.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the mashed sweet potatoes, maple syrup, brown sugar, raisins, cinnamon, and nutmeg. Mix well until everything is combined.
  3. Pour the sweet potato mixture into a greased baking dish.
  4. Top with mini marshmallows, spreading them evenly.
  5. In another bowl, mix together the chopped pecans, flour, brown sugar, and melted butter to create the topping.
  6. Spread the pecan topping over the marshmallows.
  7. Bake for 30-35 minutes or until the top is golden brown and the marshmallows are toasted.
  8. Allow to cool slightly before serving.

Notes

For serving, pair with turkey, ham, or grilled meat. Top with a sprinkle of cinnamon or whipped cream for extra flavor. Store in the fridge for 3-5 days or freeze in an airtight container for longer storage. Consider adjusting sweetness to taste.
