Ingredients
  

For the batter
  • 1 cup peaches, peeled and diced Use ripe peaches for best flavor.
  • 1/2 cup vegetable oil Can substitute with brown butter for added depth.
  • 1/2 cup sugar
  • 2 large eggs Can substitute with an egg replacement for egg-free version.
  • 1/2 cup sour cream Plain full-fat yogurt can be used as a substitute.
  • 1 teaspoon vanilla extract
  • 1 1/2 cups flour All-purpose flour is recommended.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and spray 3 mini loaf pans or 1 large loaf pan.
  2. In a medium bowl, combine the peaches, oil, sugar, eggs, sour cream, and vanilla extract.
  3. Stir in the flour, baking soda, and salt, mixing until just combined.
  4. Pour batter evenly into prepared pans.
Baking
  1. Place pans in preheated oven and bake for 25-30 minutes if mini loaves, 50-55 minutes if large loaf.
  2. Remove from oven and allow to cool slightly before slicing and enjoying.

Notes

Serve slices still slightly warm with softened butter or ricotta; pairs well with coffee or tea. Store in an airtight container at room temperature for 2–3 days, or refrigerate for up to a week.
