  • 1 tablespoon baking powder
  • ¾ teaspoon salt
  • 2 teaspoons baking soda
  • cups sugar
Wet Ingredients
  • 3 eggs
  • cups evaporated milk
  • 1 tablespoon vinegar
  • 1 tablespoon gel red food color
  • ¾ cup melted butter or margarine
Miscellaneous
  • 3 oz cupcake liners
  • 3 oz plastic molds

Method
 

Preparation
  1. Prepare the cupcake liners and molds for steaming and set them aside.
  2. In a bowl, mix flour, cocoa powder, baking powder, salt, and baking soda.
  3. In another bowl, whisk together sugar, eggs, evaporated milk, vinegar, and red food color.
  4. Fold the dry ingredients into the wet mixture and then add melted butter, mixing until well combined.
Steaming
  1. Fill the cupcake liners generously with batter.
  2. Boil water in a steamer, place the molds inside, and steam on medium heat for 2 minutes.
  3. Reduce the heat to low and continue steaming for an additional 16 minutes.
Serving
  1. Allow cupcakes to cool before serving. Top with powdered sugar or cream cheese frosting, if desired.
