Preparation
- Preheat the oven to 350°F (175°C). Prepare a 9x13 pan with nonstick baking spray.
- Use a food processor to crush the Golden Oreo cookies into fine crumbs. Mix these crumbs with melted butter and press them firmly into the bottom of the prepared pan.
Cheesecake Mixture
- In a bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
- Add the Greek yogurt and vanilla, mixing until combined.
- Introduce the eggs one at a time, blending well after each addition. Be careful not to overbeat.
- Spread the cheesecake mixture over the crust.
- Spoon the strawberry pie filling over the cheesecake layer and swirl with a butter knife.
Topping
- In a small bowl, mix oats and brown sugar, then cut in the softened butter until crumbly.
- Sprinkle the crumb topping evenly over the strawberry layer.
Baking
- Bake for 55-60 minutes or until the topping is golden brown.
- Allow to cool to room temperature, then refrigerate for 4-5 hours.
Notes
For added texture, consider folding in fresh strawberries before adding the filling. A splash of lemon juice can brighten the flavors. Store covered in the refrigerator for up to a week.
