Ingredients
  

Crust
  • 30 cookies 30 Golden Oreo Cookies
  • 5 tablespoons 5 tablespoons unsalted butter, melted
Cheesecake Filling
  • 2 packages 2 - 8 ounce packages cream cheese, softened Softened to room temperature
  • 1 1/3 cups 1 1/3 cups powdered sugar
  • 1 cup 1 cup plain Greek yogurt
  • 2 teaspoons 2 teaspoons vanilla extract
  • 2 large 2 large eggs
  • 1 can 1 - 21 ounce can strawberry pie filling
Topping
  • 1/2 cup 1/2 cup old fashioned oats
  • 1/3 cup 1/3 cup packed light brown sugar
  • 2 tablespoons 2 tablespoons unsalted butter, softened

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Prepare a 9x13 pan with nonstick baking spray.
  2. Use a food processor to crush the Golden Oreo cookies into fine crumbs. Mix these crumbs with melted butter and press them firmly into the bottom of the prepared pan.
Cheesecake Mixture
  1. In a bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
  2. Add the Greek yogurt and vanilla, mixing until combined.
  3. Introduce the eggs one at a time, blending well after each addition. Be careful not to overbeat.
  4. Spread the cheesecake mixture over the crust.
  5. Spoon the strawberry pie filling over the cheesecake layer and swirl with a butter knife.
Topping
  1. In a small bowl, mix oats and brown sugar, then cut in the softened butter until crumbly.
  2. Sprinkle the crumb topping evenly over the strawberry layer.
Baking
  1. Bake for 55-60 minutes or until the topping is golden brown.
  2. Allow to cool to room temperature, then refrigerate for 4-5 hours.

Notes

For added texture, consider folding in fresh strawberries before adding the filling. A splash of lemon juice can brighten the flavors. Store covered in the refrigerator for up to a week.
