Strawberry Cheesecake Parfaits

Ingredients
  

For the crust
  • 8 cookies Oreo cookies Crushed for the base
For the cheesecake layer
  • 8 oz cream cheese, softened Should be at room temperature
  • 2 tablespoons granulated sugar To sweeten the cream cheese
  • 1 cup diced strawberries Fresh strawberries for pureeing
  • 2 tablespoons hot water To dissolve gelatin
  • 1 packet unflavored gelatin For setting the cheesecake
  • 0.5 cup homemade whipped cream Folded into the cheesecake mixture
For the topping
  • 21 oz can strawberry pie filling To top the cheesecake layers
  • 1 batch homemade whipped cream For piping on top
  • to taste mini Oreos, wafer cookies, sprinkles For garnish

Method
 

Preparation
  1. Crush the Oreo cookies and evenly spoon the crumbs into the bottoms of 8 5-ounce dessert cups.
  2. Mix the softened cream cheese and sugar until smooth and creamy.
  3. In a food processor, puree the strawberries.
  4. Add hot water and gelatin to the pureed strawberries and pulse again.
  5. Beat the pureed strawberries into the cream cheese mixture until fully combined.
  6. Fold in 0.5 cup of the whipped cream gently.
  7. Divide the strawberry cheesecake mixture evenly among the dessert cups and spread it out flat with the back of a spoon.
  8. Use a fork to break apart the larger berries in the strawberry pie filling and spoon it on top of the cheesecake.
  9. Pipe the remaining whipped cream on top of each parfait using a piping bag with tip 1M.
  10. Refrigerate the parfaits for at least 1 hour to let them set.

Notes

These parfaits can be assembled and refrigerated up to 48 hours in advance. Add delicate garnishes just before serving to keep them crisp.
