- In a blender, add the fresh strawberries and blend until smooth.
- In a bowl, combine the almond milk, maple syrup, and vanilla extract. Stir until well combined.
- Stir the chia seeds into the mixture until evenly distributed.
- Gently fold the strawberry puree into the almond milk mixture, making sure everything is well mixed.
- Pour the mixture evenly into serving cups or jars.
- Spoon the plain Greek yogurt (or vanilla yogurt) on top of each cup.
- Cover and refrigerate for at least 4 hours, or overnight, to allow the chia seeds to absorb the liquid and create a pudding-like texture.
- Once set, top with extra fresh strawberries and enjoy!
Notes
Serve chilled, garnished with fresh strawberries on top. Best enjoyed as a breakfast or dessert. Can be layered in desserts for a beautiful presentation.
