  • 16 ounces fresh strawberries (plus more for topping) Choose ripe strawberries for better flavor.
  • ½ cup unsweetened almond milk (or milk of choice) Can substitute with any milk alternative.
  • 2 teaspoons maple syrup (or sweetener of choice) Adjust sweetness to taste.
  • 1 teaspoon vanilla extract For added flavor.
  • ¼ cup chia seeds Provides texture and nutrition.
  • ½ cup plain Greek yogurt or vanilla yogurt For topping and added creaminess.

Preparation
  1. In a blender, add the fresh strawberries and blend until smooth.
  2. In a bowl, combine the almond milk, maple syrup, and vanilla extract. Stir until well combined.
  3. Stir the chia seeds into the mixture until evenly distributed.
  4. Gently fold the strawberry puree into the almond milk mixture, making sure everything is well mixed.
  5. Pour the mixture evenly into serving cups or jars.
  6. Spoon the plain Greek yogurt (or vanilla yogurt) on top of each cup.
  7. Cover and refrigerate for at least 4 hours, or overnight, to allow the chia seeds to absorb the liquid and create a pudding-like texture.
  8. Once set, top with extra fresh strawberries and enjoy!

Notes

Serve chilled, garnished with fresh strawberries on top. Best enjoyed as a breakfast or dessert. Can be layered in desserts for a beautiful presentation.
