Ingredients
  

For the Filling
  • 5 cups fresh strawberries, hulled and diced
  • 1 cup granulated sugar
  • 4 tablespoons cornstarch
  • 4 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
For the Crust
  • 14.1 ounces refrigerated pie crusts, thawed
  • 1 large egg, room temperature
For the Topping
  • 1.5 cups powdered sugar, sifted
  • 2 to 2.5 tablespoons whole milk
  • 0.5 teaspoon vanilla extract
  • 0.5 teaspoon rainbow sanding sugar sprinkles

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the strawberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Mix well and let it sit for about 10 minutes.
  3. Roll out one pie crust and place it into a 9-inch pie pan. Pour the strawberry filling into the crust.
  4. Roll out the second crust, cut slits for a lattice design or simply cover the filling and cut slits for steam to escape.
  5. Beat the egg and brush it over the crust.
Baking
  1. Bake for 35 to 40 minutes until the crust is golden brown and the filling is bubbling.
Finishing Touches
  1. Let the pie cool completely.
  2. Whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over the pie and sprinkle with rainbow sanding sugar.

Notes

For best results, don't overwork the dough and consider adding fresh mint leaves when serving. This pie can be made with other berries as well.
