Ingredients
  

For the yogurt layers
  • 2 cups Greek yogurt Use full-fat for creaminess.
  • 1 tablespoon vanilla extract
  • 1 cup fresh strawberries Blend most for the strawberry layer.
  • 1 tablespoon honey Add to both yogurt layers.
  • 1 tablespoon lemon juice For freshness in the strawberry mixture.
For the granola base
  • 1 cup granola Combine with melted ingredients.
  • 2 tablespoons coconut oil Melted for binding.
  • 2 tablespoons white chocolate Melted; optional for binding and sweetness.

Method
 

Preparation
  1. Blend most of the strawberries with honey and lemon juice until smooth. Save some diced strawberries to fold in at the end.
  2. Mix a vanilla yogurt layer with plain yogurt, honey, and vanilla extract.
  3. Prepare a strawberry yogurt layer with yogurt, strawberry puree, and diced berries.
  4. Combine granola with melted coconut oil, honey, and white chocolate to form the base.
Assembly and Freezing
  1. Firmly press the granola mixture into popsicle molds.
  2. Layer with the vanilla yogurt, followed by the strawberry yogurt mixture.
  3. Insert popsicle sticks and freeze for at least 4 hours or overnight.

Notes

To serve, let the pops sit for 30-60 seconds before biting into the granola crust. Store wrapped individually in parchment or in an airtight container.
