Preparation
- Blend most of the strawberries with honey and lemon juice until smooth. Save some diced strawberries to fold in at the end.
- Mix a vanilla yogurt layer with plain yogurt, honey, and vanilla extract.
- Prepare a strawberry yogurt layer with yogurt, strawberry puree, and diced berries.
- Combine granola with melted coconut oil, honey, and white chocolate to form the base.
Assembly and Freezing
- Firmly press the granola mixture into popsicle molds.
- Layer with the vanilla yogurt, followed by the strawberry yogurt mixture.
- Insert popsicle sticks and freeze for at least 4 hours or overnight.
Notes
To serve, let the pops sit for 30-60 seconds before biting into the granola crust. Store wrapped individually in parchment or in an airtight container.
