Ingredients
  

For the Cookie Cups
  • 3/4 cup salted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Sprinkles for topping
For the Frosting
  • 2 ounces cream cheese, softened
  • 3 cups powdered sugar
  • 1/4 cup butter
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract
  • Pink or red food coloring gel (optional)

Method
 

Preparation
  1. Preheat your oven to 350 degrees F and lightly grease two regular muffin pans with nonstick cooking spray.
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  3. Add egg, vanilla extract, and almond extract. Beat until smooth.
  4. In a separate bowl, whisk together flour, baking powder, and baking soda.
  5. Slowly add the flour mixture to the butter-sugar mixture and mix until a dough forms.
  6. Press 2 tablespoons of cookie dough into the bottom of each cupcake pan, pushing it halfway up the sides.
Baking
  1. Bake in the preheated oven for about 12 minutes, until just starting to turn golden.
  2. Let them cool for at least 15 minutes, then press down the center to form cup shapes. Allow to cool completely.
Frosting
  1. In a bowl, beat together softened cream cheese and butter until smooth.
  2. Add powdered sugar, milk, and vanilla extract, adjusting consistency if necessary.
  3. Pipe frosting into each cookie cup and add sprinkles if desired.

Notes

Let the cookie cups cool completely before pressing down the centers. You can mix in mini chocolate chips or chopped nuts for a delightful crunch.
