Sugar-Free Blueberry Italian Cream Soda

Ingredients
  

For the Blueberry Syrup
  • 2 1/4 cups blueberries Use ripe, fragrant berries for best flavor.
  • 1 cup granulated sweetener Adjust according to taste.
  • 1 cup filtered water
  • 1 tsp lemon juice Adds brightness; can increase to 2 tsp for a sharper flavor.
For the Drink
  • 1 cup club soda
  • 1/4 cup homemade sugar free blueberry syrup
  • 3 tbsp half & half Can substitute with coconut cream for a dairy-free version.
  • 1/4 cup whipped cream Optional topping.
  • Ice cubes Ice cubes For serving.

Method
 

Make the Blueberry Syrup
  1. Combine 1 cup filtered water, 1 cup granulated sweetener, and 1 tsp lemon juice in a medium saucepan and stir until combined.
  2. Add 2 1/4 cups blueberries and stir. Bring to a simmer over low–medium heat, stirring occasionally for about 15 minutes.
  3. Mash the blueberries gently with a spatula to release their juice, then simmer for another 8 to 10 minutes until the mixture is glossy and slightly reduced.
  4. Remove from heat, allow to cool for a few minutes, then strain the mixture through a fine mesh sieve into a bowl, pressing on the solids to extract as much syrup as possible.
  5. Chill the syrup in the refrigerator for 1 to 2 hours.
Prepare the Drink
  1. Fill a tall glass with ice cubes.
  2. Pour in club soda until the glass is halfway full.
  3. Add 1/4 cup of the chilled blueberry syrup and stir gently.
  4. Slowly pour in 3 tbsp half & half so it ribbons through the soda.
  5. Top with 1/4 cup whipped cream if desired.

Notes

Serve immediately in a tall, clear glass that showcases the color and layers. Offer a straw and a teaspoon for stirring.
