Preparation of Glaze
- Blend the chopped mango until smooth.
- Pour into a saucepan and add soy sauce, honey, rice vinegar, garlic, ginger, and chili flakes.
- Bring to a simmer, then reduce to low and cook for 5-6 minutes.
- Add the cornstarch slurry and stir until thickened (1-2 minutes). Set aside.
Cooking Chicken
- Season chicken with salt, pepper, and garlic powder.
- Heat oil in a skillet over medium-high heat.
- Add chicken and cook for 6-8 minutes until golden brown.
Glazing Chicken
- Reduce heat to low, pour mango glaze over chicken, and toss to coat.
- Simmer for 2-3 minutes.
Serving
- Serve over rice or noodles and top with green onions, sesame seeds, herbs, and lime juice.
Notes
Use ripe mango for the sweetest glaze; for variations, try adding sriracha for heat or substitute tofu for a vegan option.
