Brownie Base
  • 8 Tablespoons unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 Tablespoons coconut oil or avocado oil or vegetable oil
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1 teaspoon instant espresso powder
  • 2 teaspoons cornstarch
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 ounces semi-sweet chocolate bar, chopped
Mascarpone Layer
  • 8 ounces mascarpone cheese
  • 1 cup heavy cream
  • 5 Tablespoons powdered sugar
  • 1 teaspoon instant espresso powder
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 325 degrees F and lightly grease an 8x8 inch baking dish.
  2. In a bowl, whisk the melted butter and granulated sugar until smooth.
  3. Add the eggs and vanilla extract, whisking until fully combined.
  4. Stir in the oil and cocoa powder, then fold in the flour, espresso powder, cornstarch, baking soda, and salt.
  5. Integrate the chopped chocolate into the batter.
  6. Pour the batter into the prepared baking dish and spread evenly.
  7. Bake for 25 to 30 minutes, conducting the toothpick test for doneness. Allow to cool completely.
Mascarpone Layer
  1. In a separate bowl, beat together the mascarpone, heavy cream, powdered sugar, espresso powder, and vanilla extract until soft peaks form.
  2. Spread the mascarpone mixture over the cooled brownies and dust with cocoa powder.
  3. Slice and serve or refrigerate until serving.

Notes

For best results, use high-quality cocoa powder and chocolate. Consider infusing coffee liqueur into the mascarpone layer for added flavor. Use a hot knife to cut for clean slices. Store in an airtight container in the refrigerator for up to five days.
