For the cookie dough
  • 1 cup unsalted butter, softened Ensure the butter is at room temperature for maximum creaminess.
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
For the chocolate mix-ins
  • 1 cup milk chocolate chips
  • 1 cup dark chocolate chips
  • 1 cup white chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, incorporating each fully before adding the next, then stir in the vanilla.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually fold the dry ingredients into the creamed mixture to form a thick batter.
  6. Gently fold in the milk, dark, and white chocolate chips.
Baking
  1. Drop rounded tablespoons of dough onto ungreased baking sheets.
  2. Bake for 10-12 minutes, or until the edges are set.
  3. Allow to cool on the baking sheet for a few minutes before transferring to wire racks.

Notes

For best results, consider chilling the dough for an hour before baking to enhance flavor. Rotate baking sheets halfway through baking for even cooking.
