Method
Preparation of the Crust
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until it resembles damp sand.
- Press this mixture into the bottom and up the sides of a 9-inch pie dish.
- Bake for 10 minutes, then allow to cool while you prepare the layers.
Making the First Layer
- In a mixing bowl, whisk together the sweetened condensed milk, key lime juice, key lime zest, and egg yolks until smooth.
- Pour this mixture into the cooled crust and bake for 15 minutes. Let it cool completely afterward.
Making the Second Layer
- Beat the cream cheese until smooth, then add granulated sugar, egg, key lime juice, and vanilla extract, mixing until well combined.
- Carefully spread this mixture over the first layer.
Baking the Pie
- Lower your oven temperature to 325°F (160°C) and bake the pie for 20-25 minutes until set but still with a gentle jiggle.
- Cool to room temperature, then refrigerate for at least 4 hours, or preferably overnight.
Making the Third Layer
- In a chilled bowl, beat together the heavy cream, powdered sugar, and vanilla until stiff peaks form.
- Gently spread this over the chilled pie.
Garnishing and Serving
- Finish with extra lime zest and lime slices or twists.
- Cut into wedges and serve chilled.
Notes
For the best flavor, use fresh key limes and don’t rush the chilling process. Consider adding a layer of strawberries or raspberry compote for variations.
