Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs Crushed graham crackers for the base

For the first layer
  • 1 can sweetened condensed milk Main ingredient for the first creamy layer

For the second layer
  • 8 oz cream cheese, softened Provides a creamy texture
  • 0.25 cups granulated sugar For sweetness in the second layer

  • 1 tablespoons key lime juice Enhances lime flavor
  • 1 teaspoon vanilla extract Adds depth of flavor
For the third layer
  • 1 cup heavy whipping cream For the whipped topping
  • 2 tablespoons powdered sugar Sweetens the whipped cream

Method
 

Preparation of the Crust
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until it resembles damp sand.
  3. Press this mixture into the bottom and up the sides of a 9-inch pie dish.
  4. Bake for 10 minutes, then allow to cool while you prepare the layers.
Making the First Layer
  1. In a mixing bowl, whisk together the sweetened condensed milk, key lime juice, key lime zest, and egg yolks until smooth.
  2. Pour this mixture into the cooled crust and bake for 15 minutes. Let it cool completely afterward.
Making the Second Layer
  1. Beat the cream cheese until smooth, then add granulated sugar, egg, key lime juice, and vanilla extract, mixing until well combined.
  2. Carefully spread this mixture over the first layer.
Baking the Pie
  1. Lower your oven temperature to 325°F (160°C) and bake the pie for 20-25 minutes until set but still with a gentle jiggle.
  2. Cool to room temperature, then refrigerate for at least 4 hours, or preferably overnight.
Making the Third Layer
  1. In a chilled bowl, beat together the heavy cream, powdered sugar, and vanilla until stiff peaks form.
  2. Gently spread this over the chilled pie.
Garnishing and Serving
  1. Finish with extra lime zest and lime slices or twists.
  2. Cut into wedges and serve chilled.

Notes

For the best flavor, use fresh key limes and don’t rush the chilling process. Consider adding a layer of strawberries or raspberry compote for variations.
