Preparation
- Preheat your oven to 350F and line a 9-inch by 9-inch baking pan with parchment paper.
- In a large bowl, combine 1.5 cups of flour, 0.5 cups of shredded coconut, powdered sugar, and salt for the crust.
- Add the cold, cubed butter and blend until the mixture resembles coarse crumbs.
- Press the crust mixture into the prepared pan and bake for 18-20 minutes, until the edges are light golden brown.
Making the Filling
- While the crust bakes, whisk together the eggs, granulated sugar, lime juice, lime zest, 2 tablespoons of flour, and vanilla extract until smooth.
Baking
- Once the crust is out of the oven, pour the lime filling over it and return to the oven.
- Bake for an additional 20-25 minutes until the filling is set but still slightly jiggly.
Cooling and Serving
- Let cool completely, sprinkle extra shredded coconut on top, and chill in the fridge for at least 2 hours before slicing into bars.
Notes
