Preparation
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then add vanilla extract and mix until smooth.
- In another bowl, whisk together flour, baking powder, and a pinch of salt.
- Gradually add the dry mixture to the wet ingredients until just combined.
- Gently fold in the rainbow sprinkles until evenly distributed.
Baking
- Scoop rounded balls of dough onto the prepared baking sheets, leaving two inches of space between them.
- Bake for 10–12 minutes or until edges are golden and centers remain soft.
- Let them cool slightly on the baking sheets before transferring to wire racks.
Notes
Store in an airtight container at room temperature for up to a week. These cookies can be frozen for longer storage.
