Cookie Base
  • 2 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • 1 cup unsalted butter (softened) Ensure butter is softened for optimal creaming
  • ¾ cup granulated sugar
  • ¾ cup brown sugar (light)
  • 2 large eggs
  • 2 tsp vanilla extract
Mix-Ins
  • 1 cup rainbow sprinkles Feel free to mix in chocolate chips or colored sugar for variations

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then add vanilla extract and mix until smooth.
  4. In another bowl, whisk together flour, baking powder, and a pinch of salt.
  5. Gradually add the dry mixture to the wet ingredients until just combined.
  6. Gently fold in the rainbow sprinkles until evenly distributed.
Baking
  1. Scoop rounded balls of dough onto the prepared baking sheets, leaving two inches of space between them.
  2. Bake for 10–12 minutes or until edges are golden and centers remain soft.
  3. Let them cool slightly on the baking sheets before transferring to wire racks.

Notes

Store in an airtight container at room temperature for up to a week. These cookies can be frozen for longer storage.
