Valentine's Day Oreo M&M's Cookies

Ingredients
  

For the cookies
  • 1/2 cup butter (Slightly softened) Slightly softened butter helps the sugars cream smoothly.
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 each egg
  • 2 tsp vanilla extract Adds flavor.
  • 1 1/3 cup flour
  • 1 tbsp corn starch Keeps cookies tender.
  • 1/2 tsp baking soda
  • 1/2 tsp salt Reduce if using salted butter.
  • 2/3 cup Valentine's Day M&M's
  • 7 each Oreo cookies (roughly chopped) Use regular stuffed, not double stuffed.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, cream the butter and both sugars together using a spatula.
  3. Add in the vanilla and egg, and mix until smooth and well incorporated.
  4. Add the dry ingredients starting with flour, corn starch, baking soda, and salt. Stir just until combined.
  5. Fold in the M&M's and chopped Oreo pieces.
  6. Using a large cookie scoop (1/4 cup – 4 tbsp), scoop out the cookie dough to create 10 equal cookies.
Baking
  1. Place the scoops on the prepared baking sheet and bake for 13 minutes. They should look underdone in the middle.
  2. For perfectly round cookies, rotate them with a cookie cutter as soon as they come out of the oven.
  3. Cool on the baking sheet for 5 minutes then transfer to a cooling rack.

Notes

Store cooled cookies in an airtight container at room temperature for up to 4 days. For longer storage, freeze the baked cookies for up to 3 months.
