Ingredients

Cookie Ingredients
  • 1 cup all purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/3 cup granulated sugar
  • 1/2 cup fresh strawberries, finely chopped Use very fresh strawberries and pat them dry before chopping.
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Powdered sugar for dusting Dust the cookies before serving.

Method

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy (3-5 minutes).
  3. Mix in the vanilla extract and fold in chopped strawberries.
  4. In a separate bowl, whisk together flour, baking powder, and salt; gradually add to the wet mixture until just combined.
  5. Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them apart.
Baking
  1. Bake for 12-15 minutes until golden around the edges but soft in the center.
Serving
  1. Serve these warm or cooled, dusted with powdered sugar.
  2. Pair them with tea, buttermilk, or coffee for a lovely experience.

Notes

Chill the dough briefly if it feels too soft to help cookies hold their shape. Rotate the pan halfway through baking for even results.
