Preparation
- Preheat your oven to 350 degrees F and line a muffin tin with cupcake liners.
- In a mixing bowl, whisk together the egg whites, vegetable oil, and grape soda with a handheld mixer until well combined.
- Add the cake mix along with the grape drink mix, mixing until everything is thoroughly incorporated.
- Add a few drops of purple gel coloring for an extra splash of color.
- Fill each cupcake liner two-thirds full and bake for about 15 minutes, checking for doneness with a toothpick.
- Once baked, let the cupcakes cool on a wire rack.
Frosting
- In a mixing bowl, beat the softened butter, vanilla, and almond extract until fluffy.
- Gradually add the powdered sugar and heavy cream, alternating between the two until the frosting reaches a silky-smooth texture.
- Stir in some gel food coloring to achieve the desired grape hue.
- Pipe the frosting onto your cooled cupcakes in a spiral pattern and sprinkle with purple sparkling sugar for garnish.
Notes
Store cupcakes in an airtight container at room temperature for up to three days. Refrigerate for longer storage, allowing to come back to room temperature before serving. For added fun, mix pop rocks into the frosting!
