Preparation
- Preheat oven to 180C/160C fan-forced and line a 20 x 30cm slice pan with baking paper.
- Arrange the crackers in a single layer over the base of the prepared pan, trimming them if needed.
Cooking
- In a small saucepan over medium heat, combine sugar and butter. Stir gently as they melt together.
- Let the mixture come to a boil and cook, stirring, for 30 seconds until it thickens.
- Pour the sugar mixture evenly over the crackers.
- Bake for 5 minutes or until the sugar mixture bubbles.
- Pour the melted white chocolate over the bubbly sugar mixture and smooth the surface.
- Scatter hundreds and thousands and rainbow star sprinkles on top, then sprinkle with sea salt flakes.
- Set aside for about 2 hours or until everything has set.
Serving
- Break into pieces to serve and enjoy with a cup of tea.
Notes
For added crunch, use different types of crackers or add a layer of caramel underneath the chocolate. Use different sprinkles or edible glitter to match the occasion. These can be frozen in an airtight container for up to a month.
