White Chocolate Crackers

Ingredients
  

For the crackers
  • 6 pieces Arnott's Salada Original crackers
  • 160 g brown sugar (lightly packed)
  • 125 g salted butter, chopped
  • 360 g white chocolate block, melted (2 x 180g blocks)
  • 1 tbsp hundreds and thousands
  • 2 tbsp rainbow star sprinkles
  • 1/2 tsp sea salt flakes

Method
 

Preparation
  1. Preheat oven to 180C/160C fan-forced and line a 20 x 30cm slice pan with baking paper.
  2. Arrange the crackers in a single layer over the base of the prepared pan, trimming them if needed.
Cooking
  1. In a small saucepan over medium heat, combine sugar and butter. Stir gently as they melt together.
  2. Let the mixture come to a boil and cook, stirring, for 30 seconds until it thickens.
  3. Pour the sugar mixture evenly over the crackers.
  4. Bake for 5 minutes or until the sugar mixture bubbles.
  5. Pour the melted white chocolate over the bubbly sugar mixture and smooth the surface.
  6. Scatter hundreds and thousands and rainbow star sprinkles on top, then sprinkle with sea salt flakes.
  7. Set aside for about 2 hours or until everything has set.
Serving
  1. Break into pieces to serve and enjoy with a cup of tea.

Notes

For added crunch, use different types of crackers or add a layer of caramel underneath the chocolate. Use different sprinkles or edible glitter to match the occasion. These can be frozen in an airtight container for up to a month.
