Ingredients
  

For the batter
  • 4 pieces eggs
  • 200 ml milk Or milk alternatives like almond or oat milk
  • 200 g flour
  • 1/2 tsp salt
For cooking
  • Vegetable oil Enough to coat the muffin tin

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Coat each cup of a muffin tin with a generous splash of vegetable oil.
  3. Place the muffin tin in the oven for about 10 minutes to heat the oil.
  4. In a large bowl, whisk together the eggs, milk, flour, and salt until smooth and frothy.
  5. Once the oil is hot, carefully remove the tin and pour the batter into the sizzling oil.
Cooking
  1. Return the muffin tin to the oven and bake for 20-25 minutes until the puddings rise and are golden.
  2. Serve hot and fresh from the oven.

Notes

Ensure the oil is hot before adding the batter for proper rise. Let batter rest for 30 minutes for better results.
