Base Ingredients
  • 1/2 cup unsalted butter, melted and cooled to room temperature For a richer flavor, consider browning the butter before mixing.
  • 1/2 cup granulated sugar
  • 1 1/2 cups all-purpose flour Can be substituted with gluten-free flour.
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon kosher salt
Filling
  • 2 cups cherry pie filling Fresh cherries can be used as a substitute.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Prepare an 8x8 inch pan lined with parchment paper.
  2. In a large mixing bowl, combine the melted butter and sugar, stirring until well blended.
  3. Add the flour, baking soda, baking powder, and salt to the mixture, stirring until crumbly.
  4. Set aside 3/4 cup of the crumb mixture. Press the remaining mixture firmly into the lined pan.
  5. Pour the cherry pie filling over the crust.
  6. Sprinkle the reserved crumb mixture evenly over the top.
Baking
  1. Bake in the preheated oven for 23-25 minutes, until golden brown.
  2. Allow the bars to cool completely before cutting into squares.

Notes

Serve with whipped cream or vanilla ice cream. Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. Freeze individual portions if desired.
