Ingredients
  

Apple Filling
  • 2 cups diced apples Use firm apples like Granny Smith or Honeycrisp.
  • 1/2 cup sugar Adjust according to sweetness preference.
  • 1 teaspoon cinnamon Can add nutmeg for richer flavor.
  • 1 tablespoon lemon juice Freshly squeezed for best flavor.
Pie Crust
  • 1 package refrigerated pie crusts
Egg Wash
  • 1 egg for egg wash
  • 1 tablespoon milk For brushing on crust.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the diced apples, sugar, cinnamon, and lemon juice. Mix well to coat the apples.
  3. Roll out the pie crusts on a clean surface. Cut them into circles to fit in your muffin tin.
  4. Place the crusts into the muffin tin cups. Press gently to mold the crusts to the shape of the cups.
  5. Fill each crust with the apple mixture until they are nicely filled.
  6. Take the remaining pie crust and cut out small circles or strips for topping. Arrange them on top of the apples.
  7. In a small bowl, beat the egg and milk together. Brush this mixture over the crusts for a shiny finish.
Baking
  1. Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown.
  2. Let the mini apple pies cool for a few minutes before serving.

Notes

Serve warm, enjoy plain, or add a scoop of vanilla ice cream, drizzle caramel sauce, or dust with powdered sugar. Store in an airtight container for up to 3 days, or freeze for up to a month. If you want to change up the fruit, try peaches, berries, or cherries.
