Preparation
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the diced apples, sugar, cinnamon, and lemon juice. Mix well to coat the apples.
- Roll out the pie crusts on a clean surface. Cut them into circles to fit in your muffin tin.
- Place the crusts into the muffin tin cups. Press gently to mold the crusts to the shape of the cups.
- Fill each crust with the apple mixture until they are nicely filled.
- Take the remaining pie crust and cut out small circles or strips for topping. Arrange them on top of the apples.
- In a small bowl, beat the egg and milk together. Brush this mixture over the crusts for a shiny finish.
Baking
- Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown.
- Let the mini apple pies cool for a few minutes before serving.
Notes
Serve warm, enjoy plain, or add a scoop of vanilla ice cream, drizzle caramel sauce, or dust with powdered sugar. Store in an airtight container for up to 3 days, or freeze for up to a month. If you want to change up the fruit, try peaches, berries, or cherries.
