- In a medium saucepan, combine the pumpkin puree, sweetened condensed milk, cocoa powder, and butter.
- Cook over medium heat, stirring constantly, until the mixture thickens and starts to pull away from the bottom of the pan, about 10 minutes.
- Remove from heat and let cool to room temperature.
- Butter your hands lightly, then roll the mixture into small balls.
- Roll the balls in chocolate sprinkles if desired.
- Place the brigadeiros in paper cups and refrigerate until firm.
Notes
Store any leftover Pumpkin Brigadeiros in an airtight container in the refrigerator for up to a week. They can also be frozen for about a month. Remember to thaw them in the refrigerator before serving.
