Ingredients
  

Main Ingredients
  • 1 cup pumpkin puree Use pure pumpkin puree, not pumpkin pie filling.
  • 1 can sweetened condensed milk
  • 2 tablespoons unsweetened cocoa powder Can be substituted with cinnamon or nutmeg for a different flavor.
  • 2 tablespoons unsalted butter Use dairy-free butter for a vegan version.
  • 1/2 cup chocolate sprinkles Alternatively, roll in crushed nuts or coconut flakes.

Method
 

Preparation
  1. In a medium saucepan, combine the pumpkin puree, sweetened condensed milk, cocoa powder, and butter.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and starts to pull away from the bottom of the pan, about 10 minutes.
  3. Remove from heat and let cool to room temperature.
  4. Butter your hands lightly, then roll the mixture into small balls.
  5. Roll the balls in chocolate sprinkles if desired.
  6. Place the brigadeiros in paper cups and refrigerate until firm.

Notes

Store any leftover Pumpkin Brigadeiros in an airtight container in the refrigerator for up to a week. They can also be frozen for about a month. Remember to thaw them in the refrigerator before serving.
