Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter, softened Ensure it is at room temperature for easy creaming.
  • 1 cup creamy peanut butter Natural peanut butter can be used, but may change texture.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour Can substitute with a gluten-free flour blend.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
For the Decoration
  • 1 package miniature chocolate peanut butter cups One for each cookie.
  • 1 bag candy corn For decorating to resemble turkey feathers.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Baking
  1. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on a baking sheet lined with parchment paper, leaving space between each cookie.
  2. Press a mini peanut butter cup into the center of each cookie ball.
  3. Bake for 10-12 minutes, or until the edges are lightly golden.
Decoration and Serving
  1. Let the cookies cool for a few minutes, then decorate with candy corn to resemble turkey feathers if desired.
  2. You can serve warm or at room temperature. They pair wonderfully with milk, coffee, or hot cocoa.

Notes

To keep your cookies fresh, store them in an airtight container at room temperature for about 5-7 days. For longer storage, freeze the cookies separated by wax paper.
